When it’s summertime and you truly want the livin’ to be easy, you can turn to these 10 simple summertime supper ideas to keep your kitchen time to a minimum.
These no-cook or hardly-any-cooking recipe ideas are perfect for hot summer days and light appetites. Nothing heavy here, ’cause you have to save room for ice cream 🙂
I’m sharing these ideas with you because they are my go-tos. Not just on summer days, but all the days of the year. (Just check out my Insta account if you doubt me 🙂 ) My kids make smoothies 2-3 times a week, and the BBQ flatbread bites are a regular request, which is why I try never to be out of pickles.
These recipes are perfect when you’ve got big hunger, and little capacity for complicated planning (a side effect of big hunger, ironically).
Most of these summertime supper ideas require zero cooking, and minimal prep.
So scroll through and see if there’s anything that catches your fancy. You’re pretty much looking at my life, FYI 🙂 🙂
BBQ Chicken Flatbread Bites – as I mentioned, the chopped pickles are a must!
Tzatziki Style Cucumber Dip – a cool yogurt-based dip perfect for dipping soft pita bread and raw veggies.
Avocado Tuna Salad with Dill – lots to love about this easy, flavorful and protein-packed salad that delivers on omega-3’s as well!
Blueberry Banana Peanutbutter Smoothie – I dare say one of the most fun ways to get your servings of fruit and dairy!
Open-Faced Loaded Bagels – I often have trouble deciding between sweet and savory toppings, so I usually do both! This is PB and apple slices on one, with smashed avocado and tomato on another. I sprinkle the savory one with salt and pepper, or crushed red pepper when I’m feeling especially feisty 🙂
Shaved Brussel Sprout and Kale Salad – this salad is a keeper, and if you pair it with some rotisserie chicken, you’ve got a seriously solid meal that’s a bit classy, too 🙂
Massaged Kale Salad – it pops with flavors from lemon, nuts, greens, onions, and – if you like – dried cranberries.
Tomato Toast – I originally posted this 7 years ago! It still awes me in it’s simplicity and deliciousness.
Honey Peanutbutter Yogurt Dip – Serve with apples and banana slices, celery and carrot sticks, and graham crackers. The kids won’t have to leave the pool deck, and you won’t have to wipe yogurt off the kitchen floor. WIN!
Avocado Ranch Dip – this is an easy appetizer-turned-supper with whole grain crackers and raw veggies, maybe a hard-boiled egg too?
