It gives you that I’m totally having a cupcake for breakfast feeling, while still keeping its cute little muffin feet firmly planted in the healthy choice camp.
These muffins came about after lengthy experimentation with a new DIY Chai Spice Mix I came up with – getting just the right amount of black pepper so that you could actually taste it without it killing the groovy ginger/cinnamon vibe. Once I got it right, I began food-dreaming about all the ways I could incorporate that amazing chai flavor into different recipes.
Since I love making muffins, and I love re-purposing gone-by bananas (we’re talking extra black, extra bruised, extra trashy looking bananas), it took a nanosecond to decide on chai banana muffins.
Drenching them in a glaze punched with chai flavor, hence making them double chai banana muffins, was a flash of brilliance after the fact.

Double Chai Banana Muffins with Chai Spice Glaze
Deliciously spiced chai banana muffins kicked up a notch with chai spice glaze. It's double the chai flavors in one muffin! If you love ginger, cinnamon, and cloves, you will love this sweet treat!
Ingredients
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup sugar
- 3-4 teaspoons Chai Spice Mix *see Recipe Notes
- 1 medium ripe banana, mashed about 1 medium banana
- 3/4 cup milk
- 1/4 cup canola oil
- 3/4 teaspoon vanilla
- 1 egg beaten
Chai Spice Glaze
- 1/2 cup powdered sugar
- 1-1 1/2 tablespoons milk
- 3/4 teaspoon Chai Spice Mix
Instructions

Preheat the oven to 400 degrees. Prepare a standard 12-cup muffin pan with spray oil. Set aside.

In a medium bowl, add the flour, baking powder, salt, sugar, and Chai Spice Mix. Use a whisk to combine, then set aside.

In a small bowl, add the mashed banana, milk, oil, vanilla, and egg. Whisk together until combined, then add all at once to the flour mixture.

Stir the mixture just until all the dry ingredients are incorporated. Fill each muffin cup about half-full with batter. Bake at 400 degrees Fahrenheit for about 15 minutes, or just until the tops are golden and no longer sticky.

Allow to cool in the pan for a few minutes, then remove from pan to finish cooling on a rack.
Chai Spice Glaze

Sift the powdered sugar into a small bowl through a mesh sieve to remove any lumps. Add the Chai Spice Mix and milk. Whisk until smooth.

Drizzle the glaze over cooled muffins, or dip the tops of the muffins directly in the glaze.

Muffins will stay fresh in an airtight container for up to 3 days.
Recipe Notes
DIY Chai Spice Mix:
3 teaspoons ground ginger
2 teaspoons ground cinnamon
1 teaspoon each - ground cloves, allspice, and cardamom
1/4 teaspoon ground black pepper
*This makes enough Chai Spice Mix to make the muffins and the glaze with a little left over. How will you use the rest? Try sprinkling it on your oatmeal, adding it to your tea, or mixing it into a smoothie!
