There are few things I love more than a BLT that is stuffed with veggies. A little yin to go with the yang. Crisp, savory bacon with an abundance of lettuce and deep red tomatoes. And, Lord knows, I’m an avocado addict. Today’s palate-pleaser – a Southwestern BLT with Avocado Salsa – combines these two favorites with a little Southwestern flair. Cumin, red onion, and lime juice kick up the avocado, adding a zesty zip to this classic sandwich.
Missing your usual mayo? The plain Greek yogurt adds that cool creaminess you’re looking for, and boosts the protein-levels of this otherwise lightweight sandwich. And wrapping it all up in burrito-style in a flour tortilla means you won’t miss a single bacon crumb.
I’m serious about my BLTs. And this is seriously good!
Southwestern BLT with Avocado Salsa
Yield: 4 sandwiches
Prep time: 15 minutes Cook time: varies (bacon only)
Avocado Salsa
2 avocados
1/4 teaspoon cumin
coarsely ground salt and pepper
1/4 cup chopped red onion
juice of 1/2 lime
For Sandwich
4 whole wheat flour tortillas
8 bacon strips, cooked crisp
lettuce
tomato slices
plain Greek yogurt (optional)
To make the avocado salsa:
Cut the avocados in half and remove the pit. Score each half into cubes, and scoop gently into small bowl. Add the lime juice, cumin, red onion, salt and pepper, and stir gently.
To assemble the BLT:
Lay tortillas flat. Layer lettuce, bacon, and tomato. Add 1/4 of the salsa to each. Top with dollop of plain Greek yogurt if desired. Roll it up burrito style and eat!
