Grilled Thai chicken has summer written all over it. This marinade kicks all kinds of butt, with lime juice, honey, sriracha, garlic, hoisin, and red wine all joining in for a sweet and savory symphony of flavors. It’s not only incredible on chicken, but on shrimp as well, and I’m sure would be sure amazing on pork or salmon. You just can’t go wrong with a marinade that includes a little something for everyone 🙂
Don’t be daunted by the number of ingredients. Half of them are things you probably already have hanging in your kitchen (red wine, honey, garlic, maybe sriracha). If you don’t want to buy extra ingredients you may not use again, feel free to skip the oyster sauce and just increase the hoisin a bit. Play a little with the amount of lime juice and honey to your liking. Then marinate the heck out of your chicken, grill it, and listen for angels singing.
If it doesn’t require too much extra brain power, set a small amount of it aside for dipping. Trust me – it’s fabulous.
Grilled Thai Chicken with Honey and Lime
Make 4 servings
Prep time: 15 minutes Wait time: 1-8 hours Cook time: 10 minutes
Marinade ingredients:Grated zest and juice from 2 small limes
1/2 cup hoisin sauce
2 tablespoons oyster sauce
2 tablespoons red wine
2 tablespoons honey
1/2 tablespoon Asian chile sauce (sriracha or similar)
2 teaspoons ground ginger
2 teaspoons chopped garlic
1 pound of chicken breast cutlets
Whisk all ingredients together. Place the chicken in a non-reactive container, and pour the marinade over it. Cover and refrigerate for 1-8 hours. Preheat the grill over medium heat. Grill the chicken 4-5 minutes on each side, until the center is no longer pink and the internal temperature reads 165 F.
If not using the marinade immediately, cover and refrigerate for up to a week.
