Do you love peanut butter like we love peanut butter? I’m talking about a straight-out-of-the-jar, right off the spoon kind of love. We eat it on toast, in sandwiches, on celery, in oatmeal, and my favorite, swiped onto a banana. My love for PB is definitely genetic. My dad used to make PB sandwiches that were easily two inches thick and just wash it down with a glass of milk. For him, that was the essence of a perfect meal.
Anyway, if you know what I’m talking about, have I got a treat for you! Peanut butter yogurt over bananas with crunchy granola. Mark and I were served something similar while staying at a bed-and-breakfast a few weeks ago. Normally, I would not swoon over yogurt, but this was so good, I had to try to recreate it at home.
As mini-meals go, it’s got everything you want: whole grains, fruit, a calcium-rich low fat dairy source, and a good dose of protein as well. All these things satisfy your belly and help keep your busy mind focused rather than wondering when the next meal’s going to be served. But, really, what does all that matter if it doesn’t taste good? No worries there, because this is awesome. Sweet and cool with a little crunch, and quick and easy to make. Both my eldest and I loved it and were scraping every bit out of the dish.
Try it for breakfast or an afternoon snack, and feel the love!
Peanut Butter Yogurt and Bananas
Serves 2
1/2 cup low fat vanilla yogurt (like Trader Joe’s organic)
1 tablespoon peanut butter
1 medium banana, cut into slices
2 tablespoons granola (like Kind)
In a small bowl, soften peanut butter in the microwave for 20-30 seconds. Add yogurt and stir briskly until the peanut butter is smoothly incorporated into the yogurt.
Divide the banana slices evenly between two small bowls. Pour yogurt evenly over both servings. Top each serving with one tablespoon of granola.
